We are not referring to the rock-bottom of the Mediterranean ocean floor. We are referring to the rear end, backside and lower part. Let us call it the arse of the Mediterranean. When referring to Mediterranean food in gastronomy we are usually thinking of culinary experiences that originates from the northern coastlines. We would like to turn the tide.
